Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, whisk the egg and milk together. Add the melted butter and vanilla extract, stirring until well-combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Fold the diced apples into the batter, ensuring they are evenly distributed.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray. Pour ¼ cup of batter onto the skillet for each pancake and cook for 2-3 minutes on each side, or until golden brown.
