  • 1 cup (240ml) neutral oil (vegetable or canola)
  • 2 large eggs
  • 2 cups (250g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup (120g) chopped nuts (optional – walnuts or pecans)

Instructions

  1. Prepare Apples: Peel and dice apples into small chunks. Set aside.
  2. Mix Wet Ingredients: In a large bowl, whisk together sugar, oil, and eggs until smooth.
  3. Combine Dry Ingredients: In another bowl, sift flour, baking soda, cinnamon, and salt.
  4. Make Batter: Gradually add dry ingredients into wet. Stir until just combined. Fold in apples, vanilla, and nuts.
  5. Bake: Pour batter into a greased and floured Bundt pan. Bake at 350°F (175°C) for 50–60 minutes, until a toothpick comes out clean.
