- 1 cup (240ml) neutral oil (vegetable or canola)
- 2 large eggs
- 2 cups (250g) all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 cup (120g) chopped nuts (optional – walnuts or pecans)
Instructions
- Prepare Apples: Peel and dice apples into small chunks. Set aside.
- Mix Wet Ingredients: In a large bowl, whisk together sugar, oil, and eggs until smooth.
- Combine Dry Ingredients: In another bowl, sift flour, baking soda, cinnamon, and salt.
- Make Batter: Gradually add dry ingredients into wet. Stir until just combined. Fold in apples, vanilla, and nuts.
- Bake: Pour batter into a greased and floured Bundt pan. Bake at 350°F (175°C) for 50–60 minutes, until a toothpick comes out clean.
- Cool and Serve: Let cake cool in pan 10–15 minutes, then invert onto wire rack. Dust with powdered sugar or glaze.
