Ingredients

- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 large carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon ground ginger
- 1/2 teaspoon ground black pepper
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 1 cup frozen peas
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Juice of 1 lemon
Instructions
- Prep your ingredients by chopping the onion, garlic, carrots, and celery.
- In a large pot over medium heat, heat olive oil and sauté the onion and garlic until softened.
- Add the carrots and celery, cooking for an additional 5 minutes.
- Stir in spices and cook briefly for flavor infusion.
- Pour in the chicken broth, bring to a boil, then reduce to a simmer for 15 minutes.
- Stir in the shredded chicken and peas, simmer for another 5 minutes.
- Stir in parsley and lemon juice, season to taste, and serve hot.
