Ingredients

  • 4 cups All-purpose flour
  • 0.5 cups Granulated sugar
  • 1 packet Rapid Rise Instant Yeast (2 1/4 tsp.)
  • 1 teaspoon Salt
  • 1.5 cups Milk (warmed)
  • 6 tablespoons Butter (melted)
  • 1 large Egg (room temperature)
  • 0.33 cups Unsalted butter (at room temperature)
  • 1.33 cups Almond meal
  • 0.5 cups Granulated sugar (for filling)
  • 1 large Egg (for filling)
  • 2 teaspoons Almond extract
  • 0.5 teaspoon Vanilla extract
  • 0.25 teaspoon Salt (for filling)
  • 0.5 cups Unsalted butter (for filling)
  • 4 ounces Cream cheese (softened)
  • 1.5 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)
  • 0.5 teaspoon Almond extract (for frosting)
  • 1 pinch Salt (for frosting)
  • 0.5 cups Slivered almonds (for topping)

Instructions

  1. In a stand mixer fitted with the paddle attachment, combine 2 cups of the flour, granulated sugar, yeast, and salt on low speed until well blended.
  2. In a microwave-safe bowl, heat the milk and butter until warm (around 110°F) and mostly melted, roughly 45 seconds should do.
  3. Pour the warm milk mixture into the dry ingredients, then add the egg, almond extract, and vanilla extract. Beat on low speed until combined, then switch to high speed for 2 minutes until the mixture is smooth.
  4. Change to the dough hook attachment and add another 1 1/2 cups of flour. Knead on low until combined, scraping down the sides of the bowl as needed. Gradually add the remaining 1 cup of flour until the dough pulls away from the sides.
  5. Increase speed to medium-low and knead until the dough is smooth and supple, about 10 minutes.
  6. Transfer the dough to a lightly-oiled bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until it has doubled in size.
  7. While the dough is rising, make the almond filling by mixing the unsalted butter, almond meal, sugar, egg, almond extract, vanilla extract, and salt until it forms a thick paste. Set aside.
  8. Once the dough has risen, turn it out onto a floured surface. Roll it into a 12-inch by 18-inch rectangle.
  9. Spread the almond filling evenly over the entire dough rectangle.
  10. Starting from the long edge, roll the dough tightly and pinch the seam to seal.
  11. Using floss or a sharp knife, cut the rolled dough into 12 even pieces and place them in a 9 x 13 inch pan lined with parchment paper.
  12. Cover the rolls loosely with a dish cloth and let them rise for another hour until they become fluffy and nearly double in size again.
  13. Preheat the oven to 350°F and bake the rolls for about 30 minutes or until they are golden brown.
  14. Once baked, transfer the pan to a wire cooling rack to let the rolls cool slightly while you prepare the frosting.
  15. In a mixing bowl, combine the unsalted butter, cream cheese, powdered sugar, vanilla extract, almond extract, and a pinch of salt. Mix until smooth and creamy.
  16. Generously spread frosting over the warm rolls and finish with a sprinkle of slivered almonds on top.
