A hearty and wholesome veggie lasagna loaded with fresh vegetables and rich cheese layers.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a bowl, mix ricotta cheese, spinach, Italian seasoning, salt, and pepper.
- In a baking dish, spread a layer of marinara sauce.
- Layer 3 noodles, half of the ricotta mixture, zucchini, bell pepper, and mushrooms.
- Add another layer of sauce and cheese.
- Repeat layers, finishing with noodles and remaining sauce and cheese on top.
- Bake for 30-35 minutes until bubbly and golden.
- Let it cool slightly before serving.
Notes
Feel free to add or substitute any of your favorite vegetables. For a gluten-free version, use gluten-free lasagna noodles.
