Description

A hearty and wholesome veggie lasagna loaded with fresh vegetables and rich cheese layers.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a bowl, mix ricotta cheese, spinach, Italian seasoning, salt, and pepper.
  4. In a baking dish, spread a layer of marinara sauce.
  5. Layer 3 noodles, half of the ricotta mixture, zucchini, bell pepper, and mushrooms.
  6. Add another layer of sauce and cheese.
  7. Repeat layers, finishing with noodles and remaining sauce and cheese on top.
  8. Bake for 30-35 minutes until bubbly and golden.
  9. Let it cool slightly before serving.

Notes

Feel free to add or substitute any of your favorite vegetables. For a gluten-free version, use gluten-free lasagna noodles.
