- 12 ounces dried spaghetti
- 2 cups cooked, shredded chicken breast
- 1 cup shredded Monterey Jack cheese
- 1 cup diced tomatoes, drained
- ½ cup diced onions
- 1 teaspoon chili powder
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant and translucent.
- Stir in diced tomatoes, shredded chicken, chili powder, and heavy cream. Cook for 3-5 minutes until well combined.
- Add the cooked spaghetti to the skillet and toss to coat evenly with the sauce.
- Transfer the spaghetti mixture to the prepared baking dish. Sprinkle the shredded Monterey Jack cheese over the top.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with fresh parsley or green onions if desired.
Notes
For added flavor, mix in crumbled bacon or sautéed mushrooms. Leftovers can be stored in an airtight container for up to 3 days.
