Description

A traditional Italian pasta dish made with eggs, cheese, pancetta, and pepper.


Ingredients

Scale
  • 400g spaghetti
  • 150g pancetta, diced
  • 2 large eggs
  • 100g Parmesan cheese, grated
  • Black pepper, to taste
  • Salt, to taste

Instructions

  1. Cook the spaghetti according to package instructions in salted water until al dente.
  2. In a pan, cook the pancetta over medium heat until crispy.
  3. In a bowl, whisk together the eggs, Parmesan cheese, and black pepper.
  4. Drain the spaghetti and immediately mix it with the pancetta (off the heat).
  5. Quickly add the egg mixture, stirring constantly to create a creamy sauce.
  6. Serve immediately with additional Parmesan and black pepper.

Notes

Use guanciale for a more authentic flavor. Serve with a side salad.
