Ingredients

- 400g spaghetti
- 150g pancetta, diced
- 2 large eggs
- 100g Parmesan cheese, grated
- Black pepper, to taste
- Salt, to taste
Instructions
- Cook the spaghetti according to package instructions in salted water until al dente.
- In a pan, cook the pancetta over medium heat until crispy.
- In a bowl, whisk together the eggs, Parmesan cheese, and black pepper.
- Drain the spaghetti and immediately mix it with the pancetta (off the heat).
- Quickly add the egg mixture, stirring constantly to create a creamy sauce.
- Serve immediately with additional Parmesan and black pepper.
Notes
Use guanciale for a more authentic flavor. Serve with a side salad.
